Hey readers! So I know I haven't been too consistent in blogging, and I had a feeling that when the semester was in full swing I would be swamped with work. I kind of hoped that I would be able to maintain the blog regardless and NOT PROCRASTINATE, but of course I think being a college student is pretty much synonymous with procrastination on some level.

Chocolate-covered strawberries are such a decadent but guilt-free treat since there's fruit involved. (Guilt free for me anyways...but when am I ever really guilty about eating something decadent and delicious and chocolate?)

Are your one of those people who buys a lot of fruit only to forget about them until they start to rot? I am guilty of this-especially with bananas! I hate when that happens! Instead of tossing your overripe fruit, why not cook with it? For these coconut-banana fritters, overripe bananas are necessary!

If you're like me you're constantly trying to eat healthier...and constantly failing to do so. About every month or so I get this earth-shattering realization that junk food is bad for me and I need to start eating healthier and working out more...and this lasts for about a week or so before I slowly fall into bad habits again. But the good thing is that no matter how many times I fail at my healthy-eating regimen I always tell myself that I can do it again. You may fall hard but picking yourself up is what counts. Anyways, end of semi-inspirational/motivational talk. Let's talk food.

I made chicken nuggets the other day at the request of my youngest brother. He had been bugging my mother for a while for chicken nuggets, and finally my mom delegated the task to me. Since my family eats zabiha meat we don't eat chicken nuggets (and other meats) from the regular fast food places like McDonald's or Chick-fil-a, so hitting the nearby McDonald's was not an option. And honestly whether or not you eat only zabiha meat, eating fast food is really not a healthy option with all the unnecessary, added ingredients.

Three words, baby.
Red velvet. Cheesecake. Ice Cream.
Ok, technically that was like 5 words, but ohmyGod you guys it's RED VELVET CHEESECAKE ICE CREAM. I think I may have gained a few pounds just saying that out loud. This is sinful stuff, you guys. But oh. so. good. And simple. I've said it before, it's dangerous when sinfully good stuff is this easy to make but hey I'm not complaining! This is another ridiculously easy ice cream recipe, no ice cream maker necessary!
